Rhubarb Pie

Ingredients

Crust

  • 1 cup flour
  • 5 tbsp powdered sugar
  • 1/2 cup butter, slightly softened

Filling

  • 2 eggs, beaten
  • 1 1/2 cups sugar
  • 1/4 cup flour
  • 3/4 tsp baking powder
  • 1 pinch salt
  • 3 cups rhubarb

Instructions

Crust

  1. Combine ingredients, but don’t overwork the dough too much.
  2. Press into pie pan.
  3. Bake 10-15 min, @ 350º F

Filling

  1. Mix first ingredients well. Then add rhubarb.
  2. Fill pie crust.
  3. Bake @ 350º F for 35 minutes or until center is firm.
